Spinach Power Salads with Salmon and Lemon Honey Basil Vinaigrette

This Spinach Power Salad with Salmon is a healthy and delicious meal option. It combines fresh spinach, grilled salmon, and a flavorful Lemon Honey Basil Vinaigrette for a burst of flavors and nutrients. Perfect for a light lunch or dinner.

Ingredients:

  • 4 cups fresh spinach leaves

  • 2 salmon fillets about 6 ounces each

  • 1/4 cup cherry tomatoes, halved

  • 1/4 cup cucumber, sliced

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup roasted almonds, chopped

  • 1/4 cup feta cheese, crumbled

  • For the Lemon Honey Basil Vinaigrette:

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon honey

  • 1 teaspoon Dijon mustard

  • 2 tablespoons fresh basil leaves, finely chopped

  • Salt and pepper to taste

Instructions:

Preheat your grill to medium-high heat


Season the salmon fillets with salt and pepper


Grill the salmon for 4-5 minutes per side or until it flakes easily with a fork


Remove from heat and let it rest for a few minutes


In a large salad bowl, combine the fresh spinach, cherry tomatoes, cucumber, red onion, roasted almonds, and crumbled feta cheese


In a separate small bowl, whisk together the lemon juice, olive oil, honey, Dijon mustard, and chopped basil to make the vinaigrette


Season with salt and pepper to taste


Flake the grilled salmon into bite-sized pieces and add it to the salad

Green Plaid Cookies for St. Patrick's Day

These festive Green Plaid Cookies are perfect for celebrating St. Patrick's Day. Their buttery texture and attractive plaid design will bring a smile to everyone's face!

Ingredients:

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 2 1/2 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • Green food coloring

  • Green sprinkles or colored sugar optional

Instructions:

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy


Add the egg and vanilla extract to the mixture, beating well until fully combined


In a separate bowl, whisk together the all-purpose flour, baking powder, and salt


Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms


Divide the dough into two equal portions


Add green food coloring to one portion of the dough, kneading it until the desired green color is achieved


Wrap both portions of dough in plastic wrap and refrigerate for at least 30 minutes


Preheat your oven to 350F 175C and line a baking sheet with parchment paper


Remove the chilled dough from the refrigerator and roll out each portion to a thickness of about 1/4 inch


Using a sharp knife or a cookie cutter, cut out small squares or rectangles from both green and plain dough


Arrange the cutout shapes on the prepared baking sheet, alternating between green and plain to create a plaid pattern


If desired, sprinkle green sprinkles or colored sugar on top of the cookies


Bake the cookies in the preheated oven for 10-12 minutes or until the edges turn slightly golden


Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely

Grilled Veggie Naan Pizza

Grilled Veggie Naan Pizza is a tasty and simple pizza alternative that's great for a quick dinner during the week or when you're grilling outside. The crust on the naan bread is crispy, and the grilled vegetables and melted cheese go so well together that it's impossible to say no.

Ingredients:

  • 2 pieces of naan bread

  • 1/2 cup tomato sauce

  • 1 cup shredded mozzarella cheese

  • 1/2 cup sliced bell peppers

  • 1/2 cup sliced red onions

  • 1/2 cup sliced zucchini

  • 1/2 cup sliced mushrooms

  • 1/4 cup sliced black olives

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

  • Olive oil for brushing

Instructions:

Warm up the grill over medium-high heat


Put olive oil on one side of each naan bread


Cover the side of the naan bread that isn't oiled with a thick layer of tomato sauce


Spread out the shreds of mozzarella cheese on top of the tomato sauce


Bell pepper, red onion, zucchini, mushrooms, and black olives should be sliced and put on top of the cheese


Mix garlic powder and dried oregano and sprinkle it on top of the vegetables


Add pepper and salt to taste


Carefully put the naan pizzas on the grill grates so that the oiled side is facing down


Put the lid back on the grill and cook for 5 to 7 minutes, or until the cheese melts and the naan is crispy


Every so often, check to make sure they don't catch fire


Take the veggie naan pizzas off the grill when they are done


Cut it up and serve it hot


If you want, you can add fresh basil leaves on top

  • 8 oz macaroni pasta

Ingredients:

  • 1 lb ground beef

  • 4 cups shredded lettuce

  • 1/2 cup diced tomatoes

  • 1/4 cup diced onions

  • 4 slices cheddar cheese, chopped

  • 4 slices bacon, cooked and crumbled

  • 1/4 cup sugar-free pickles, chopped

  • 1/4 cup sugar-free ketchup

  • 1/4 cup mayonnaise

  • 2 tbsp mustard

  • Salt and pepper to taste

Instructions:

Put ground beef in a pan and cook it over medium-low heat until it turns brown and is fully cooked


Remove any extra fat and let the food cool down a bit


Shred lettuce, diced tomatoes, diced onions, chopped cheddar cheese, crumbled bacon, and chopped pickles together in a large bowl


The dressing is made by mixing sugar-free ketchup, mayonnaise, and mustard in a small bowl


Add pepper and salt to taste


Mix the cooked ground beef into the salad by tossing it in


Pour the dressing over the salad and toss it again so that everything is covered

Ingredients:

  • 2 cups mixed greens

  • 1 cup cherry tomatoes, halved

  • 1/2 cucumber, sliced

  • 1/4 red onion, thinly sliced

  • 1/4 cup feta cheese, crumbled

  • 1/4 cup olives, pitted and sliced

  • 1/4 cup balsamic vinaigrette dressing

Instructions:

Wash and prepare the mixed greens, cherry tomatoes, cucumber, red onion, and olives


In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and olives


Drizzle the balsamic vinaigrette dressing over the salad and toss gently to combine

Easy Vegan Mummy Cookies

These vegan mummy cookies are a fun and spooky treat for Halloween or any occasion. They are made with almond flour and topped with a dairy-free white chocolate frosting and peanut butter bandages.

Ingredients:

  • 1 cup almond flour

  • 1/4 cup maple syrup

  • 2 tablespoons coconut oil, melted

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/4 cup dairy-free white chocolate chips

  • 1 tablespoon coconut oil

  • 1 tablespoon creamy peanut butter

  • Vegan chocolate chips for eyes

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet


Put almond flour, maple syrup, melted coconut oil, vanilla extract, and salt in a bowl


Mix until you get a dough


Put some flour on a surface and roll out the dough


Then cut it into strips


Leave some space between each strip when you put them on the baking sheet that has been used


Put it in the oven for 10 to 12 minutes, or until the edges turn golden brown


Take it out of the oven and let it cool down all the way


In a small bowl that can go in the microwave, melt the dairy-free white chocolate chips with 1 tablespoon of coconut oil


Stir the mixture every 30 seconds until it is smooth


Once the cookies are cool, coat half of each one with the melted white chocolate mixture


Put them back on the baking sheet


Put the creamy peanut butter in a different small bowl


Microwave it for 20 to 30 seconds, or until it starts to run


Spread the peanut butter over the cookies with a spoon to make the mummy's bandages


To make eyes, put two vegan chocolate chips on each cookie


Before you serve the cookies, put them in the fridge for at least 30 minutes to set

Cheesy Bacon Burger

Indulge in the deliciousness of our Cheesy Bacon Burger - a classic favorite with a twist. Perfectly grilled beef patty, melted cheddar cheese, crispy bacon, and fresh toppings, all sandwiched between a toasted bun.

Ingredients:

  • 1 lb ground beef

  • 4 hamburger buns

  • 4 slices of cheddar cheese

  • 8 slices of bacon

  • 1/4 cup mayonnaise

  • 2 tbsp ketchup

  • 2 tbsp mustard

  • 1/2 cup shredded lettuce

  • 1 tomato, sliced

  • 1 onion, sliced

  • Salt and pepper to taste

Instructions:

Warm up the grill or pan on the stove over medium-high heat


Make burger patties out of the four equal parts of ground beef


Add pepper and salt


Grill or cook bacon slices in a pan until they are crispy


Take it off and let it dry on paper towels


Grill burger patties for four to five minutes on each side, or until they're done the way you like them


In the last minute of cooking, put a slice of cheddar cheese on top of each patty


Toast the buns on the grill or in a toaster until they are lightly browned while the burgers are cooking


To make the burger sauce, mix the mayonnaise, ketchup, and mustard in a small bowl


Spread the sauce on the bottom bun of each burger, then add lettuce, tomato slices, onion slices, a cheesy burger patty, and two crispy bacon slices


Put the other half of the bun on top


Enjoy while hot!

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced

  • 1 cup diced onion

  • 1 cup diced bell peppers assorted colors

  • 1 can 15 oz black beans, drained and rinsed

  • 1 can 15 oz corn kernels, drained

  • 1 can 15 oz diced tomatoes

  • 1 can 4 oz diced green chilies

  • 1 packet taco seasoning

  • 4 cups chicken broth

  • Salt and pepper to taste

  • 1 cup shredded cheddar cheese for garnish

  • 1/2 cup chopped fresh cilantro for garnish

  • Sour cream optional, for serving

  • Tortilla chips optional, for serving

Instructions:

Place diced chicken, onion, bell peppers, black beans, corn, diced tomatoes, diced green chilies, and taco seasoning in the pressure cooker


Pour in the chicken broth and stir to combine


Season with salt and pepper to taste


Close the pressure cooker lid and set to high pressure for 8 minutes


Once done, use the quick release to depressurize the cooker


Open the lid carefully and stir the soup


Serve the soup hot, garnished with shredded cheddar cheese and chopped cilantro
